When you have enough picked over to fill six or eight quart cans you had better can them, as it is not best to let them stand too long after being hulled, especially if it is hot, which is usually the case when canning all kinds of berries. Take two teacups full of sugar, put it in your porcelain kettle, and enough of water to dissolve it, which will be not to exceed a jill, put your kettle bn the stove, and as soon as your syrup comes to a boil, put in fruit enough to fill two quart jars, which will be about four boxes of strawberries (as they werepicked in the field). As soon as your fruit is thoroughly boiling (or you think it is all hot through), set your kettle on back part of stove, having your jars sitting on reservoir well heated up, light a match and hold it in the jar you are going to fill first, until it has burned all the sulphur off, then put in your hot fruit until your jar is full; wipe all drippings off and around the top of your jar, take a rubber (out of warm water where you have had them soaking for half an hour), put it on your jar and screw on the top. I generally can screw the top on tight enough with my hand by holding thejar with a coarse towel around it, and holding the top with another cloth in the other hand, now turn your jar upside down and let it stand on the topuntil cold. Notice closely if any juice comes out around the lid; if it does, turn it up and make it tighter, until it stops leaking. Sometimes you may have to take the top off and put two rubbers on, and if that don't stop it you may as well take the fruit out of that jar'and put it in another one, as it must be air tight.
