Mr. Doan: I wish to inquire whether fruit stored before fully ripe can obtain the proper flavor and color after being taken out. Professor Blair: It wil-continue ripening, but it will not improve its flavor. Mr. De Vilbis: 1 think it improves pear to gather them before they are perfectly ripe. I think they take on a good flavor. A number of years I have kept pears until the third of March, which is my wedding anniversary. Chairman Swaim: At what temperature? Mr. De Vilbis: At a temperature ranging from 70 degrees to freezing. Now I have a cold storage made of cinders and cement which I am very proud of, and have been very successful with. We were able last year to keep the temperature to forty when the outside temperature was sixty and seventy and the greater portion of the time we were able to keep it down to thirty-four and Ave. I have one dead air space--an inner wall four inches thick. The storage house is twenty by forty ami cost a little more than five hundred dollars all told. Mr. Milhous: Is it made of coarse or fine cinders? Mr. De Vilbis: Just as they come from the fire. Professor Blair: Loose or mixed? Mr. De Vilbis: Mixed. Even in my cellar sometimes I open the windows at night and allow the cold air to circulate through it and close it up in the day time. John Grossman: Is it a solid wall or is there an air space? Mr. De Vilbis: 1 he inner wall is four inches and the outer, is five inches, nine inches of a dead air space, and an eighteen inch wall.
