My vegetables are shipped from Ann Arbor, Michigan, to New York City, Buffalo, Pittsburgh, Cleveland, Cincinnati, Toledo, Detroit, and Chicago. My trade is mostly wholesale. It is impossible for me to give an accurate estimate of my sales in Chinese vegetables alone, as there usually is a call for several boxes of onions, carrots, celery, and two or three boxes of the Chinese varieties. Naturally my first sales were made to the Chinese. I furnished the chop suey houses in my home city with Chinese vegetables and the keepers passed around the information that I had these vegetables for sale to their friends in other cities who wrote asking for them. In the meantime I began to experiment in cooking these new vegetables. Chop suey cooks, Chinese students in the nearby University, missionaries returned from China, even the importers of the seeds, -all contributed to my store 1M of Chinese cookery lore. When I had mastered their recipes, I began to offer my Chinese produce to the Americans. To introduce and advertise the goods I go to large hotels in the cities and explain how to prepare and cook these new vegetables. I also give every customer who comes to my house a free sample of these new foods and directions for cooking, and I also exhibit at conventions, state granges and fairs all over the country. A short time ago, I furnished free, enough of my Chinese celery cabbage for the salad course at a banquet.
