Simone (Simca) Beck, Julia Child's collaborator on two volumes of Mastering the Art of French Cooking, strikes out on her own with this collection of menus de gala. Except for the most exacting and experienced of cooks, the recipes here will not be sans souci and the most elaborate (puree of fennel soup, terrine of pork, ham, tongue and spinach with herbs, chestnut ice cream) should be reserved for the day Uncle Pierre is awarded the Legion d'honneur. The most spectacular meat and fish dishes are often en brioche - baked in a delicate pastry; the vegetables turn up en gelee and the lavish pastries demand prodigal amounts of kirsch, rum and Benedictine - to say nothing of ten egg yolks. Simca does provide some helpful trucs (secrets) to keep the souffle up, the salads crisp, and the asparagus puree and mocha cream silken. And the menus are so planned that something can always be prepared in advance. Her intimate knowledge of the delicacies of Normandy, Alsace and Provence is unsurpassed and her ebullient spirits are contagious. C'est formidable. (Kirkus Reviews)
