Of these, 6 made returns to the Bureau in the former, and 13 in the latter year; but owing to the different systems upon which creameries are worked it is diflicult to put the information in tabular form so as to compare one year with another. The following table gives the statistics of the 13 creameries which reported last year: Of the 13 creameries for which statistics have been obtained, 10 made butter only, while 3 made butter and cheese. The returns for 5 of the former and for all of the latter give the average number of cows whose milk or cream was supplied during the season, and ' Assuming that sales were made by factories at the same figures in both districts, the value of product per cow in the east would be $29.50 instead of $27.99, or only 66 cents less than in the west. But why should western cheese realize half a cent per pound more than eastern? Is it because the quality is better, or because there is keener competition among buyers?
