Hildebrand says that Mtama-Pombe is made by the Wanikans who live north of the German colony, in this way: 7 parts of sorghum and one part of Eleusinian kernels are soaked three days in water, then the sorghum is removed, dried in the sun, ground to meal, water is added and it is boiled for about six hours. The mixture is then left standing two days. On the third day the Eleusinian malt, which has sprouted in the meantime and been mashed, is added. On the next day the whole is strained and is ready to drink. Dr. Braun describes a number of kinds of Pombe varying in different regions and among certain tribes, but essentially the same method is used. Considering the three regions of German East Africa, Kongo and South Africa (the home of the Kafirs), I think we have a very good picture of the beer brewing industry among the negroes of Africa. Briefly summarized, we have considered the preparation of malt from the raw fruit, the boiling of the mash, and fermentation, with the occasional use of aromatic herbs. The mash is boiled as it was not done in the brewing of beers in prehistoric times.
