This is a book of its time. The trend in cookery writing at the moment is simplicity and quality of ingredients. Elliot and Treuille have caught that mood perfectly with this organic cookbook. Elliot opened Planet Organic, an organic supermarket, in London in 1955 and Treuille is a chef, cookery teacher and writer who is committed to organic produce. Their passion for all things organic comes across immediately; the writing is enthusiastic and a lot of thought has gone into content. This is not just a book of recipes; it reflects a philosophy of life. We are encouraged to stop, slow down and think about our food; to prepare it with love and eat it with delight. The recipes are simple, the idea being that we enhance the delicious flavours which are already there, handling the ingredients as little as possible and using classic combinations as a base to work from. Hence we get 'perfect roast chicken with green olives and lemon roast potatoes' and 'coriander roast lamb with spiced chickpea sauce'. There is plenty of inspiration too for the less carnivorous amongst us and many of the recipes have a list of variations; for example we have six wonderful things to do with mashed potatoes (horseradish smashed potatoes sounds divine). At the front of the book is a chapter on selection and storage, so that we don't end up with a fridge full of rotting greens as well as also a list of suggested staples to keep in the pantry, fridge and freezer.
