When I first went to France in the late 1950s, travellers were advised on arriving at a hotel to casually display the Michelin Guide when they checked in (presumably with the subtle blackmail threat of sending in a negative report to the inspector if things weren't comme il faut). Despite useful rivalry from the Logis de France guide (for small hotels) and the Gault-Millau (for certain sorts of restaurant), the big fat red one is still the starting-point for where to stay and eat. As long as you remember that the number of knives and forks accorded to a restaurant entry is solely an indicator of comfort, not quality of food.
