FROZEN TOMATO SALAD: --Six fair sized fully ripe tomatoes, peeled and put through a sieve; add 5 drops of onion juice, teaspoon each of salt and sugar, a little pepper and a few drops of tabasco sauce. Freeze like any water ice, and serve on lettuce with mayonnaise dressing. ROMAINE SALAD: --Put crisp leaves of romaine in a salad bowl, rubbed lightly with garlic. Make the following dressing: Take 1 hard boiled egg, mash it as finely as possible with a fork, add a little paprika, a pinch of salt, -i teaspoon of French mustard, 1 teaspoon of hashed chives, 1 teaspoon of hashed tarragon, 2 tablespoons of oil and 3 of vinegar. Add this to the romaine, toss well and serve. ENDIVE AND TOMATO SALAD: --Lay strips of endive lengthwise on salad plates and cross them with peeled tomatoes cut in sections like on orange. Dress with French dressing. CAULIFLOWER SALAD: --Break cauliflower into small pieces and boil in salt water until tender ( not too long). Place cauliflower in center of plate, and on either side put lettuce hearts, each filled with diced beets on one side and carrots on the other. (Beets and carrots must be thoroughly cooled before using.) Serve with French dressing. ASPARAGUS SALAD: --One can asparagus tips. Arrange on head lettuce and serve with vinaigrette sauce. Will serve 5 or 6 persons. VINAIGRETTE SAUCE: --Put in a bowl 6 tablespoons oil, 1 tablespoon each minced gherkins, parsley, green peppers, beets, tarragon, and chives. Add teaspoon salt, teaspoon paprika, 1 clove garlic, and 3 tablespoons vinegar. Add piece of ice and stir with a fork until thick. Remove ice and garlic and serve at once.
