Good restaurants do not fry much, and when they do, they usually use butter. The best cooking processes are roasting, broiling, and stewing. Poor restaurants, on the other hand, fry as much of their food as possible because it is easier, quicker, involves less waste, and requires less skilled help. Look for the menu in the window. A restaurant which serves a good meal at a reasonable price usually is proud of its bill of fare. If you are fussy about what you eat, the menu will give you an Opportunity to discover whether or not you will enjoy the choices on the table d'hote.
