Excerpt: ... third fingers, fill it by placing the taper end in the milk and sucking until the milk rises in the tube above the mark, then quickly slipping the forefinger firmly over the top of the tube, allow the excess to drop out slowly until the milk in the pipette falls to the mark; then let the contents of the pipette run into one of the analytical tubes, Fig. 1, blowing out the last few drops. Care in this sampling and measurement is especially essential to accuracy of result. Where several milks are to be analyzed, it is preferable to measure out all the portions before going on to the next step in the process. The pipette may be freed from the last traces of the first sample, by rinsing it with a small portion of the next milk to be sampled, and throwing the rinsings away, when the pipette can be used for the measurement. Adding the Alkali--Fill one of the 10 c. c. pipettes to the mark with alkali, and allow the solution to flow into the milk just measured. Place the finger on the top of the tube and shake till milk and alkali are thoroughly mixed. A rubber cot on the finger will protect it from the action of the alkali. Treat all samples similarly. Place the tube in the rack B, Fig. 3, set the rack into the water-bath, heat the bath to boiling and continue boiling for two hours, or until the contents of the tube become homogeneous and of a dark brown color. At the end of the8first hour, remove rack and tubes from the bath to see that the contents of each tube are well mixed. If a whitish layer of casein and fat is found floating on the surface of the liquid, gently shake and roll the tube till the mixture is thorough.
