100+ Finnish Wartime Recipes : +Making the Most of Nature's Bounty+
100+ Finnish Wartime Recipes covers the eating habits and cooking substitutions that Finns used during the war. Emphasis has been placed on the meals that were typical during wartime, but are no longer widely used. The book presents over one hundred recipes which can be used even today. The vast majority of the recipes use and rely on ingredients provided by Nature. Recipes began to change during wartime to better utilize the goods that people were able to acquire. The cookbooks of the time included many more vegetarian recipes than previously. This was also a time of growth for the use of all kinds of substitutions and, consequently, many recipes included how one could produce and make use of substitutions.
