Product description

A collection of fundamental recipes that cross the gastronomic map of Mexico. This is a testimony to a life dedicated to the recovery, conservation, and diffusion of the culinary art of our country. It includes a personal registry of meetings with cooks and food vendors throughout the nation. A modern classic of cookbooks published throughout the world. "Cocina esencial de Mexico" can be as an indispensable reference for understanding how to eat and cook in this country. It combines the author's first three books, "The Cuisines of Mexico, The Tortilla Book," and "Mexican Regional Cooking." Starting with the years that were dedicated to field research in the diverse corners of the Mexican republic, Diana Kennedy presents a rich catalog of techniques, ingredients, recipes, and advice to re-create in our kitchens the aromas and flavors of one of the most varied and surprising cuisines of our planet.

Author information

Diana Kennedy was born in Loughton, Essex, in the United Kingdom. She moved to Mexico in 1957 with her husband, the newspaper reporter Paul Kennedy. Her gastronomic interest in the country led her to study everything related to the culture and traditional Mexican cuisine. Besides being one of the most respected researchers and professors on this topic, she is also noted for her work in environmental protection. For more than thirty years she has lived in an ecological house in Zitacuaro, Michoacan. She is the author of "The Cuisines of Mexico, The Art of Mexican Cuisine, My Mexico: A Culinary Odyssey, Recipes From the Soul," and "A Taste of Oaxaca." Among the numerous acknowledgments she has received is the Order of the Gold Eagle (1981) and a special medal from the International Association of Kitchen Professionals (2003). In 2002 the British government appointed her as a member of the Imperial Order of Britain to expand cultural relations between Mexico and the United Kingdom.
