This excellent recipe book is part of the BBC Foolproof Cookery series, which includes titles by Ken Hom, Madhur Jaffrey and Raymond Blanc. Born in Egypt, Roden has researched Mediterranean cooking for many years and her passion is translated well to the reader. This collection is filled with authentic regional recipes, clearly described with wonderfully colourful photographs to entice even the most timid of cooks. It adheres to the standard, easy-to-follow layout of most cookbooks with chapters on soups and starters, fish and shellfish, poultry and meat, pasta, grains and vegetables and of course sample menus. There is also a detailed section on equipment and ingredients, providing helpful insights into some of the lesser-known items. The recipes are varied enough to provide for all tastes, from vegetarian dishes like the Spinach Tian to old favourites such as the classic Greek Country Salad. The majority of the recipes require few ingredients and are well laid out, with extremely simple step-by-step guides aided by crisp photographs that display each dish. Probably one of the more complex dishes with the longest list of ingredients is the delicious-sounding Poussins in a Honey Sauce with Couscous Stuffing, and Roden manages to make even this look easy. The menus reflect the healthy diet of the people of the Mediterranean and this book encourages the eating of fresh wholesome food loaded with natural flavour that can be quickly prepared and cooked without fuss.
